Oh for the love of Pinterest!!

I know you have heard of Pinterest....... If not then climb out from under that rock!! ( and check it out here )

Well I have been having so much fun the last month or two trying to make a new "pinterest inspired dinner" for my family at least 5 days out of the week. Random note ** I am in love with crockpot recipes!! **

Anyway....thought I would share what I made for dinner last night:: (edit// this was from TWO nights ago now, I am just finishing the blog I started haha)

 

Skinny Sour Cream Enchiladas

Ingredients:

• 16 oz. fat free sour cream
• 1 can fat free cream of chicken soup
• 1 tbls. fresh chopped cilantro (1/2 tbls. dried)  I forgot this at the store :(
• 2 1/2 cups cooked shredded chicken breast
• 1 can Mexican Rotel
• 1 cup chopped onions
• 8 low carb tortillas
• 1 cup shredded pepper jack and colby cheese blend

Directions:

Cook up some chicken and shred it ( yep I sure did use my crockpot to get that chicken cooked in the morning)

 
Now mix together the soup ( no added water just whats in the can) and the sour cream. OH and the cilantro if you didn't forget to get some at the store like I did! Stir them in a saucepan over low/medium heat just until heated through.


 
Next combine the chicken, Rotel, and onions in a skillet sprayed with cooking spray. Heat until the onions are transparent ( or if your like me again just heat until you feel the flavors are combined)

 
Warm your tortillas a bit so you can work with them ( about 10-15 secs.) and fill them with a couple TBS. of the chicken mixture. Top the chicken with a pinch or so of cheese.

 
Roll the tortilla up like a burrito (sides in.... roll) then place seam side down in an 8x11 dish sprayed with cooking spray.

Pour the cream sauce over the top and spread evenly.

 
Top with remaining cheese ** I may have not followed the recipe on this part and I may have just put a ton of cheese on top**



Bake at 350 for 25-30 mins. until the cheese is bubbly and melted!

 
TADA!!

OCD much

Well I have always had slight "organizational OCD" ( ummm no your right I am NOT sure that that is a real thing) read above as **self diagnosed**

Anyway.... the issue I am having now with this is trying to blog while living in this slight OCD craziness. As you may have noticed I started off my first blog post  with the FMS photoaday challenge. Well I didn't keep up with it! ...... are you suprised? you might be if you don't know me, seems easy enough but for me it was not!

I even wrote each photo topic out in my planner and actually took a lot of them.... and then came the uploading part.... I couldn't find the time. then BAM OCD. I didn't want to load the pictures in a super late totally unorganized post so I gave up. sad Erin. Just sad.

you WILL sleep

Listen here little baby.... mommy needs some sleep.... mommy needs a schedule..... mommy is going CRAZY!
 
I have always planned to put Jaida on a schedule. Not so much so that I have to say "sorry (enter friends name) it's Jaidas nap time so we can't hang out." PSHHH never! I want it to be more like " Duh ( enter friend's name) we can hang, as a matter of fact we can do anything we want because Jaida will sleep through it." ;)
 
I know that it is possible because I have seen it done..... doing it myself is another story. ---enter the CIO (cry it out) method---
 
A friend of mine let me borrow the Baby Wise book and I started reading. I have to admit that I "read" it in true Erin fashion { read = skimmed} and I got the point though.... let the baby cry, and get the baby on a schedule. So I am.
 
We just moved her into her own room which was hard enough because she slept so well in her Rock and Play sleeper right next to me at night. I'm talking 7-8 hrs a night pretty much since day one. So this lack of sleep is not fun now that she is 4 months old.
 
Here is her schedule at this point ( meaning we are trying this today)
 
7:30 am - wake up
Bottle ( 6 oz formula)
Play
9:00-11:00- morning nap
11:30- Bottle ( 4oz. Breast milk)
Play/wake time
1:30- 3:30- afternoon nap
Bottle ( 4 oz breast milk)
play/wake time
5-530 or 6 - cat nap in swing
7:00pm bath/book
7:30 - bottle ( formula or breast milk)
 
and so far it's 10:30am and she is sleeping while I blog:::

***yes I am aware she is laying on her tummy.... she is an avid roller and per Dr's. orders if she rolls to her tummy "just let her sleep" ***

Photo a day catch up

First things first... lets play a little photo catch up shall we. I only did 2... yeah I know TWO that is super lame.
 
This first picture is from the 15th.... the topic is #DINNERTIME:

So I actually had forgotten to do my photo challenge pic that day (like normal) but I decided to finally eat some dinner at about 930pm when I had a free minute. I just thought it looked so good that I wanted to intagram it :) then I happened to look at the blog photo a day list and TU DUH it was exactly what I was supposed to take a pic of for the day!!
 
 
Second one is from today and it is #4:00:
 

 
I was coming home from picking up the baby from my mom's house and stopped for a quick mcflurry. Don't worry I will count those points (weight watchers) I had set an alarm for 4:00 to take the pic and was still caught off guard when it went off.

Something I wrote

I used to write poetry. I think I was good at it back when I was unhappy most of the time. I have tried to sit and write since then but the poems are never quite as powerful. Anyway.... I wrote this poem when I was 17. I had submitted it to a website so lucky for you I was able to find it to post all these years later!

ummm..... enjoy......?!

My love

the emptiness...the swollen eyes
the tears that fall...those retched lies
the empty words...my broken heart
my prayers....that we wont be apart
longing for this to come to an end
the ...hurt...the bitterness.... i start to desend
your cold words uttered...deep in the night
my mission remains.... to soon take flight
i cant hold on...the feelings prevail
the words you speak shall guide my sail
love..passion...and truth behold
this pain is unruley..ive carried my load
i must escape...from bitter truth
youve taken all of my innocent youth
tell your lies...and mask your face
my love for you...will be replaced
whisper those words im longing to hear
stay far away...yet keep me near
this hurt no longer posesses my soul
my pain becomes less...and my love becomes dull.

So here we are.... again

OK..... about the picture of something that makes me laugh. You got me, I didn't post one and you know what, I'm not going to. It's just to late now. I never said I was great at these daily picture challenges, sometimes I don't want to be put in a box. LOL.... look I set my alarm to remember todays ok sheesh. :)

So here is how I go to this blog...because it is not my first.
 
 
I had always wanted to blog, you know ....sat at the computer looking at that space that says "name here" as in a NAME for my blog. A name that will be tied to me forever if people really started to get interested. Well I got anxious and just wanted to get moving so I named my blog based on my life RIGHT THEN. I was pregnant so I named my blog baby ________'s  (last name there) lullabies.
 
After documenting my entire pregnancy and then falling short with continuing to blog once the baby was born I realized something...... that was a part of my life and a great part BUT it is not my whole life. The blog isn't all about the baby, it is also about me....my husband... my son.... and life in general, so I am starting over.
 
 
This time I thought about what I would want more of in life....... Time.
 
 
If only I could have just a little more in everyday..... just a dash......

Jumping right in

 
I haven't completely set up my blog yet... I had another blog but it wasn't a name that I could see using long term.... it wasn't well thought out. So I will tell you that story and all about me at another time. For now I want to jump right in with the October photo a day challenge from FatMumSlim's blog (here) 
 


unfortunately it is 10:25 PM so I am not going to post a landscape picture since it's dark out. I will see you tomorrow with something that makes me laugh!
